BAKED FISH WITH SPINACH1 cup cooking oil 1 ½ cup chopped onions 1 ½ cup fresh tomatoes chopped 2 cloves garlic, minced ½ cup parsley ½ cup chopped fresh dill 1 teaspoon pepper ½ teaspoon salt 2 tablespoons lemon juice ½ kg fresh spinach, chopped and blanched 1 kg fish, whole (cleaned and washed) ½ cup white wine Method -Saute onions in oil until soft. -Add garlic, tomatoes, parsley, dill, salt and pepper. Simmer for 10 minutes. -Sprinkle fish lightly with salt and lemon juice. -Arrange tomato mixture in a baking dish. Lay the fish on top and arrange spinach around it. -Pour the wine over the fish. -Cover with aluminum foil and bake in a preheated oven at 350*C for 30 minutes. -Uncover and continue baking for 15 minutes more. -Serve hot.
